PISTACHIO & MINT PESTO SALAD

INGREDIENTS

  • 5-6 TiNDLE Nuggets
  • 2 radishes, sliced
  • ½ avocado, sliced
  • 1/3 cucumber, chopped into small pieces
  • Handful of rocket leaves
  • Garnish: crumbled pistachios

Pesto sauce

  • 100g roasted pistachios
  • 15g mint
  • 50g basil
  • 4 tbsp nutritional yeast
  • 2 tbsp lemon juice
  • 80ml olive oil
  • 60ml water
  • Salt and pepper to taste

Method

  1. Start by preparing the pesto sauce. Blend all the ingredients in the food processor and season to taste.
  2. Cook the TiNDLE nuggets using your preferred cooking method according to the packet’s instructions. Once cooked, cut them into smaller pieces.
  3. In a large bowl, mix the sliced radishes, the avocado, chopped cucumbers and rocket leaves.
  4. Mix in the pesto sauce and add the TiNDLE nuggets.
  5. Garnish with crumbled pistachios and enjoy!
