PISTACHIO & MINT PESTO SALAD
PISTACHIO & MINT PESTO SALAD
INGREDIENTS
- 5-6 TiNDLE Nuggets
- 2 radishes, sliced
- ½ avocado, sliced
- 1/3 cucumber, chopped into small pieces
- Handful of rocket leaves
- Garnish: crumbled pistachios
Pesto sauce
- 100g roasted pistachios
- 15g mint
- 50g basil
- 4 tbsp nutritional yeast
- 2 tbsp lemon juice
- 80ml olive oil
- 60ml water
- Salt and pepper to taste
Method
- Start by preparing the pesto sauce. Blend all the ingredients in the food processor and season to taste.
- Cook the TiNDLE nuggets using your preferred cooking method according to the packet’s instructions. Once cooked, cut them into smaller pieces.
- In a large bowl, mix the sliced radishes, the avocado, chopped cucumbers and rocket leaves.
- Mix in the pesto sauce and add the TiNDLE nuggets.
- Garnish with crumbled pistachios and enjoy!
